Winter melon and pork rib soup with IONA Purple Clay Slow Cooker

Winter melon soup is one of the most popular Chinese soups. Slow cooked Chinese soups are known to be very nutritious. The soup is very light with no other seasoning. It helps to cool and dispel internal heat and its great for both adults and children. Winter melon is also believed to be good for the bladder, lungs large intestine and small intestine. Hence, it helps to reduce phlegm and improves urinary problems. Besides, it is also low in calories.Good recipe to try out especially for those who are health conscious. Have this bowl of soup as it is or have it to accompany a typical Southeast Asian meal.

Ingredients:

  • Winter Melon
  • 1 Carrot
  • 120g Pork / Pork Ribs
  • 1 small piece of Ginger
  • 300ml Water
  • 2.5L Water
  • 1 tbsp Gogi Berries
  • 1 Honey Date
  • 5 Red Dates

 

Instructions:

  • Remove seeds and cut winter melon into cubes. Cut carrots into smaller pieces.
  • Blanch pork in boiling water with ginger slices.
  • Add 2.5L water to slow cooker. Add pork, gogi berries, carrot, honey date and red dates.
  • Set to high to let it boil and once boiled, turn to low to let it simmer for 3-4 hours.
  • Finally add winter melon to soup and allow it to simmer for another 20 minutes.
  • Serve while hot.
